Lunchtime Inspiration

Lunchtime has always been my meal planning downfall. Basically I don't plan for it. When I write my menu and shopping list twice a month I tend to forget all about that middle of the day meal which of course leads a stressful 11:30 scavenge of the refrigerator.

Times have changed though, sort of, and it's all because of Muffin Tin Mondays. Since we joined MTM I have actually enjoyed serving Mad lunch even when there really isn't anything to serve! Now I grab my overflowing basket of MTM supplies and set to work. Making lunch is so much easier when I can throw together little bits of this and that and have them actually add up to a pretty nutritional meal. Having teeny tiny cups and little food picks means that I can serve tiny portions and make it actually look appetizing.

Here was Mad's lunch today. I speared together some tomatoes and cucumbers from the garden. Emptied the last bit of applesauce from the giant jar. Stuck a spoonful of peanut butter and handful of pretzel sticks in a tiny cup. Sliced up a cheese stick and served it with three crackers. I filled a tiny cup with raisins and ranch dressing to finish it off. Basically this was all I had in the fridge yet Maddie was overjoyed with her lunch and how 'pretty' it was.

I think the best part of serving lunch in small portions and in a creative way is that Mad devours fruits and veggies. The first thing to go today was the veggie kabobs, really who doesn't like food on a stick? Our actual muffin tin is reserved for Monday's but all the extras are free game all week long!

Of course now it's time to make my own lunch and I am not as impressed with fun sticks but I am sure I can throw something together! =)

I love it. I also feel your pain for scrambling for lunch, and I really don't want to go to the store more than twice a month.

I am so there on lunch - I feel like I give my son the same thing every day! I love all your supplies - what all do you have and where do you get them?

Oh and how is Maddie doing with the pottying?

I would also like to know where you getthose great supplies? We've just started MTM about a month ago, but we don't have fancy supplies yet!
