Muffin Tin Monday

Happy Monday! It has been a day of miracles at our house today. First up?

Crazy weather. Does that not look like crazy weather? Well how about this

Oh yes that is a snowflake my friends. Snowing. In Virginia. In March. Last week we had 80 degree days. What is up with that?

Next miracle? My no way, not me, not ever, non egg eating kid ate eggs.
Maddie has proclaimed that scrambled eggs are now her favorite. Go figure.

I figured that since Maddie was still in pajamas at lunch time breakfast for lunch was only appropriate.  In the tin? Half a whole wheat mini bagel, vanilla yogurt, Berry Berry Kix, scrambled eggs, blackberries & strawberries and Buddy Fruits orange fruit snacks. 

Not a miracle? My dear child who eats dry cereal every.single.morning demanded that her Berry Berry Kix be served with milk. Gah.

Muffin Tin Monday

Happy Valentine's Day!

That's what Maddie yelled at me around 6:30 this morning and then followed it up with MOM TODAY IS DISNEY JUNIOR DAY!!!!! Clearly it's an exciting day at our house.

Sadly I didn't live up to Maddie's expectations of a wonderfully awesome Valentine's Day breakfast. Instead I tossed her a bowl of dry Fruit Loops (no judging, I am pregnant*) and some V8. After spending the entire morning cleaning- who knows what possessed me to do that!- I decided I could be nice and whip up those special pancakes Maddie was so looking forward to this morning.


Today's Muffin Tin lunch featured heart shaped pancakes, maple syrup, a slice of Valentine's Day cookie pie, Valentine's Day trail mix and sliced strawberries.


Of course a pink drink was necessary too so Crystal Light pink lemonade it was!

Muffin Tin Monday

Ah yes we are back {again} to Muffin Tin Monday! Unfortunately yesterday Maddie went from what we thought was a head cold to the pukey bug late last night so her muffin tin meal isn't all that exciting. I figured my little bundle sulking on the couch deserved a little pep in her day though so off to the kitchen I went and made her a special sick girl muffin tin.

 On the menu today: Ramen noodles (her favorite), rainbow goldfish cracker, fresh strawberries slices, Valentine's Day trail mix, buttered toast and more Ramen noodles.

Isn't she pitiful. 
Note to self: must wash favorite blanket that is now wrapped around sicko kid.

Muffin Tin Monday

My, oh my has it been a very long time since we have enjoyed a Muffin Tin Monday meal! Despite being Madison's not best mom ever today (room cleaning day!) I thought it would be a nice break for her to have a special lunch. Today's theme was muffin tin liners so that definitely made this super easy for me! 

On the menu today: Tomato surprise, yogurt parfait (vanilla yogurt, frozen blueberries & Cheerios), half a toast cinnamon raisin bagel thin with peanut butter and a clementine.

If you have a Disney child like me chances are you know who Ze Fronk is and maybe have even tested out a recipe or two of his with your little one. Maddie has been pleading with me to make her tomato surprise for a few days now so of course I felt a bit nice and went for it. The original recipe calls for cottage cheese but we are not a cottage cheese family so I subbed in some cream cheese instead. I used a paring knife to slice the top off of a few cherry tomatoes and then squeezed out the seeds and scraped a bit to make room for the cheese that I piped in with a plastic baggie. A hit of course for a tomato loving child!

Muffin Tin Monday & A Giveaway!- CLOSED

Ahh it's Monday again and that means Muffin Tin Monday... well at least it does today. I am so inconsistent these days, oh well. Lucky for me there is no theme this week so I was able to throw together a quick little lunch for Maddie.


On the menu for today: Apple slices with caramel, pretzel goldfish, celery with a Greek yogurt dip and a Pillsbury Mini Biscuit with peanut butter and jelly. 

A simple lunch full of Maddie's favorites which means she will inhale it and then NAP TIME! La, la, la .... I may be doing a happy dance for nap time today!

If I am serving biscuits with dinner I sometimes like to sprinkle the tops with garlic powder or even melt a little cheddar cheese and top them with fresh chopped parsley.

Muffin Tin Monday

 We had such a wonderful long weekend with daddy home that we had to finish it up with something fun! We headed to the zoo this morning {have I mentioned how much I LOVE living so close to the zoo and having a membership?!} for a train ride and a picnic!

Usually daddy is working when Maddie and I head to the zoo so this was a special treat for her. We decided that such a special day deserved a train ride too. Maddie was thrilled to have daddy joining her on the train this time!

Having a membership means we don't feel compelled to see all the exhibits every single time we go. Today we visited the giant 700 pound tortoise and all the babies.

We were also lucky enough to watch one of the red pandas come down for breakfast.

After our quick trip at the zoo we headed to the nearby picnic area and found the perfect tree to lay our blanket under.

Maddie was happily surprised to see mommy packed her a mini muffin tin lunch in the basket. 

Maddie snacked on some bunny grahams, baked cheetos {soooo yummy!}, a fruit cup and pb& j on whole wheat white bread.

A bit of fun on the swings finished off a lovely morning!

Muffin Tin Monday: Numbers

Hurray! I think I deserve a parade for this one because not only did we do Muffin Tin Monday on Monday and in a muffin tin but we even stuck to the theme!

I know, I know VERY impressive!

Today I presented Madison with a stack of numbered picks

and a muffin tin for lunch.

Her job was to match the numbers with the correct tins.

Success!
On the menu today: 4 celery sticks with ranch, 2 cinnamon raisin bagel chunks with peanut butter, 3 graham cracker pieces, 6 dark chocolate covered cranberries, 10 goldfish crackers and 5 apple slices.

Nothing horribly nutritious but not too shabby either for an empty fridge!

Muffin Tin Monday

Muffin Tin Monday at Her Cup Overfloweth

I tried.
I really thought I was on top of my game this week. I did Muffin Tin Monday last night for dinner just so that I would be prepared for today. Nope. Fail.

I thought we were still doing a No Theme week but no there was a theme {A,B,C's} and our muffin tin meal has nothing to do with it.

On a brighter note though I have a great recipe to share with you!


Last night we had Pampered Chef's Taco Ring* for dinner. Super yummy and super easy. Maddie used to be a GREAT eater. It didn't matter what I put in front of her she ate it. Well not so much anymore. BUT if I am serving Mexican food {any kind. Tacos, fajitas, burritos, enchiladas} she is a happy kid. She will gobble her weight in refried beans!

*Recipe Notes:
-The recipe calls for 1/2 lb ground beef- sometimes I use ground turkey, just depends what I have. I also usually use a whole pound. This way it sorta cuts down on the amount of crescent rolls per serving.
- I don't get all fancy with the cutout pepper but instead serve all of our favorite taco toppings on the side. {Lettuce, tomatoes, onions, olives and sour cream}
- Delish as leftovers! Hubby brought some to work today and it heats up just fine in the microwave. I usually pack him a chunk of the ring in one container and then all the toppings in another.

Muffin Tin Monday, err Tuesday


I don't know what my problem is but apparently getting Muffin Tin Monday posted on MONDAY is apparently to difficult for me. I am thinking maybe we will start doing Muffin Tin Friday and then I should have plenty of time to post it on Monday. Maybe.

Whatevs.

Anywho. We did do Muffin Tin Monday yesterday {Monday} and here it is. We opted for breakfast this time to spice things up a bit!


Top: Strawberry pancake fingers and Raisin Bran Crunch. {According to Mad it isn't breakfast without cereal}
Bottom: cherries, syrup for dipping and grapes


We have been going through cherries like crazy here recently. Maddie ate piles of them this weekend! I think she has a new favorite fruit!

Muffin Tin Monday

Oh yes, you read right! It's Monday and I made Mad a muffin tin lunch. Its a miracle I know. I believe this means we are back for good now. Most likely at least.

Nothing too special today but frankly I think actually have a muffin tin meal should be special enough!

Muffin Tin Monday

Two weeks in a row!

I am on a roll....until next week at least! That's right it's Monday and that means Muffin Tin Monday! Despite today being a no theme day I felt a bit ambitious and decided to go a little all American and red, white and blue for Flag Day!

For lunch today we have a mini grilled chicken sandwich with a cheese star. Strawberry, watermelon, blueberry and mini marshmallows for a little red, white and blue mix! Blue raspberry yogurt in a tube and a few red and blue pretzel M&Ms!

We didn't have a chance to do any great flag day crafts BUT I did want to mention the fantastic ideas and printables at Making Learning Fun. I printed out this great flag magnet page and let Madison loose with some appropriately colored star stickers. The magnet pages are great with stickers, dotters, magnets or even pom poms! I have a few different sets of star and dot stickers that I picked up for about $1 each at Walmart and break them out whenever I need to keep Madison occupied for a bit!

Muffin Tin Monday

Wow. It has been a looonnnggg time since we have joined in on Muffin Tin Monday! Maddie is officially done with school and dance class leaving me with a little bit of time. It was nice to ease back into MTM today with a no theme day!

Sadly our beautiful weather has decided to take a break and the rain has begun. Blech. Muffin Tin Monday always brings a smile though! There was no theme for this week so we broke out a few of Madison's favorites for lunch.

Muffin Tin Monday - Yellow Themed


Happy Monday!

The sun has been shining all weekend and I couldn't be happier! Yellow was a perfect color theme for today's Muffin Tin Monday....well if I had any yellow food in the house!

We managed though with some fresh pineapple chunks, grilled cheese puffs and half a banana. Nope the turkey sandwich isn't yellow but it does have some adorable yellow pinwheel picks in it!

Another week has begun which means it's time for Muffin Tin Monday! No theme today means nothing particularly extraordinary at lunch. I do have to say we made a discovery this weekend - my child eats tuna fish! Who knew? Especially since I don't!

Muffin Tin Monday

Ever have one of those "I don't wanna" days?

That's where I am today.

I am feeling very unmotivated.

We had a pretty busy weekend and now all I want to do is lay on the couch and read my book.

{Have you read The Time Traveler's Wife?!?! I am loving it!}

I did manage to get up, workout for an hour and take Madison to dance class this morning though. SCORE. And I managed to make a pretty acceptable Muffin Tin Monday lunch. Maybe not all that well rounded but Madison ate ALL of it so I suppose that is a good sign!

Today was a themed day, can you guess it?

Muffin Tin Monday - Super Bowl Leftovers!

Did you watch the game? I watched a few minutes I will admit but really the Super Bowl is about the party and boy did we enjoy some fine cooking last night! I took no pictures except for this one which really I took today when I was heating up leftovers.

Oh yes those are Pioneer Woman's BBQ Bacon Wrapped Jalapeno Poppers. Go ahead and drool they are worthy of that!

Luckily my friend Suzanne did take pictures so you can also drool over her Pioneer Woman Drip Beef Sandwiches, my fruit pizza and fajita quesadillas. Sadly that's not even everything! We still had taco dip, veggies and dip, baked potato rounds, shrimp cocktail, caramel brownies and cheese and crackers. I am full just typing what we had! We ate well last night and lucky little Madison gets to eat well again today with Super Bowl leftovers for her Muffin Tin Monday lunch!

This afternoon Madison is dining on: cucumbers, ranch dip, celery, fajita quesadillas, tortilla chips, more quesadillas and her first piece of early Easter candy thanks to her great grandma!

Muffin Tin Monday

Happy Monday!

Not so much at our house though, icky weather here in Connecticut but that's okay it just means Disney princess movies and naps! Hurray!
