Chocolate Banana Peanut Butter Muffins

I am pretty sure everyone knows about the easiest muffins ever to make (1 can of pumpkin, 1 cake mix) and I have made them plenty of times but they got me thinking. What else could I use instead of pumpkin? Maybe the collection of frozen over ripe bananas in my freezer?


Why yes, yes you can! Please tell me I am not the only one with a collection of frozen bananas....


The can of pumpkin you would normally use in the recipe is 15oz which is just under 2 cups so for me 5 mashed bananas made 2 cups. Easy peasy.


Now this gets complicated: Mix 2 cups of mashed bananas with 1 cake mix. Any kind you want. I used chocolate because I had chocolate but I think yellow would be delicious and bring out a strong banana flavor. Spice cake would practically make banana bread!


Now I splurged a bit and tossed some peanut butter chips into the batter. Magic I tell you.


Fill muffin liners or in my case squares of parchment paper.

Bake at 350 for 25 minutes and then you eat. One or two. At least.


If you are nervous about these being too chocolaty don't be. They have a very strong banana flavor with a bit of chocolate thrown in. Which makes it a muffin. And healthy. I assume.
