What a wonderful weekend! The sun finally made an appearance in Connecticut this weekend and we enjoyed the weather tremendously! And boy what a busy weekend it was! Thursday night hubby took me out to my favorite Greek restaurant for dinner ~ so yummy! I just love my husband! ♥ ♥ ♥Friday evening was another birthday celebration at my mom's house with Mexican Chicken Casserole, Margaritas and Red Velvet Cheesecake. Thanks mom!
Then Saturday began the 4th of July festivities! We had a wonderful family picnic with my dad's family on Saturday and finished up with the local town parade on Sunday. Needless to say we are EXHAUSTED! I feel bad that hubby had to go to work today!
Maddie tried cherries for the first time this weekend and now has a new favorite fruit!
To end our fun filled weekend on a summery note we made smores for our Muffin Tin Monday (err Sunday) dessert! Maddie had never had them before and was not a fan of toasted marshmallows! (WHAT???) and decided to eat them uncooked!
Top: Graham cracker squares, marshmallows, milk chocolate
Bottom: Sugar cookies, marshmallows, cookies and cream chocolate

Those smores look rockin'. I love that you toasted the marshmallows. If I make them at home, I use the microwave. Cheating, but still tasty.

What a great idea! Another thing to try with smores is Fudge Stripe Cookies. Then the chocolate is already there! I am inspired to go make some right now!
My kids have never liked their marshmallows toasted either-still don't:-). Weird isn't it? The smores look delicious!!
