Muffin Tin Monday!

Today is an anything goes day for Muffin Tin Monday. I figured that since daddy is home today that I would make one of his favorites for lunch. Our main dish today was actually an appetizer. Daddy's favorites are mini ham puffs, which I believe are originally a Pampered Chef recipe but who knows!

This is the recipe I have on file but I never it make it the same way.



Mini Ham Puffs

2.5 oz finely chopped deli ham
2 tbsp finely chopped onion
1/2 cup shredded Swiss cheese
1 egg
1 tbsp snipped fresh parsley
1 1/2 tsp Dijon mustard
1/8 tsp ground black pepper
1 pkg refrigerated crescent rolls

Preheat oven to 350F. Lightly spray a mini muffin pan with cooking spray. Combine the ham, onion, cheese, egg, parsley, mustard and black pepper in a small mixing bowl until well combined.

Unroll crescent dough and press into one large rectangle. Cut dough into 24 squares. Press one square into each mini muffin cup.

Fill each muffin cup with ham mixture. Bake 12-14 minutes or until puffs are golden brown. Remove form pan; serve immediately.

*** I always use ham but as for the onions I change it up regularly. Sometimes I use white, or red or even a shallot. For the cheese I use Swiss, cheddar, smoked Gouda or anything else that is in the house! During the summer I also add fresh chives from the garden. ***



Top: celery and dip, cucumbers and dip, Rachel's Plum Honey Lavender yogurt with purple sprinkles
Bottom: mini sour cream and onion Pringles, mini ham puffs, mandarin oranges.
And the winning favorite was the cucumbers and dip!!

I am so making those mini ham puffs! Great looking tin, good enough for a grown up to eat too!

The ham puffs look really yummy, we'll have to try that for lunch one day soon.
