Caramel Apple Pancakes


Wow, I was surprised how many people asked for this recipe! Here you go!

Generally we just use the Heart Healthy Bisquick mix to make pancakes but we were all out so hubby made these by scratch. Of course the next batch (for our anniversary weekend this coming weekend!!!) he will use Bisquick so feel free to take the easy way, we do!

This pancake recipe is adapted from the Better Homes and Gardens red checkered cookbook

1 cup all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 beaten egg
1/2 cup milk
1/2 cup apple cider
2 tablespoons cooking oil
1 apple shredded*
1/2 cup Kraft Premium Caramel Bits*

1. Mix all flour, sugar, baking powder and salt in a medium mixing bowl.
2. Combine egg, milk and cooking oil in a separate mixing bowl.
3. Slowly mix the wet ingredients into the dry.
4. Stir in apple cider, shredded apple and caramel bits.
5. Make pancakes as you normally would. =)

*Use any kind of apple you like. An average size cheese grater works well for grating the apple and of course do this last minute so that it doesn't turn brown.
*Kraft Premium Caramel Bits may be difficult to find. They have them at our local Commissary but I have not seen them at my regular grocery store yet. If your store does have them they will most likely be either in the produce section next to the apples or down the baking isle along with the chocolate chips. If you can't find the caramel bits you could probably use regular caramels chopped up.
